As a mom, I want to send my kids a message of love each day they go to school. I do that through preparing special school lunches for them. I like to vary up their lunches with different foods each and everyday while keeping it simple for myself. These chicken bread rolls are perfect for school lunches! They are also a great way to use up leftovers from the night before and they freeze well!

These can be frozen then deep fried on the day you eat it.
These school lunch bread rolls are super easy to make and are also freezer- friendly. I can tell you for sure that they will certainly be a huge hit with the kids. And the best part of all…they contain 4 food groups. That’s a win for everybody.
Bread rolls recipe (Step by step)- Can be frozen then deep fried on the day you eat it:
Step 1: Remove crusts from the bread and then roll flat with a rolling pin.
Step 2: Butter the bread lightly
Step 3: Prepare your filling. I use pre-cooked chicken, steamed mixed vegetables, grated cheese and mayonnaise. (You can use any sauce of your choice). Mix together. This is a great recipe to use left over chicken/steak from the night before.
Tip: I cube and cook a kilogram of chicken breasts and a kilogram of steak and then I freeze it so that when I need fillings for certain lunches I already have them ready to go.
Step 4: Place a row of filling on the one side of the bread
Step 5: Roll into a log. The butter will help it stick closed. Beat one egg in a bowl. In a separate bowl put your breadcrumbs.
Step 6: Dip each roll in egg and then breadcrumbs. They can now be frozen at this stage. (Store in a airtight container or in zip lock bags)
Step 7: Deep fry in hot oil until golden brown on the day you want to eat it (do not defrost). Serve with a dip (optional).
Tip: I usually keep sauce sachets when we buy take-out. These are great for lunchboxes.
